Computer technology is used to actuate the oil inlet and outlet valves and to discharge gates, streamlining changing the fryer operating parameters to process different products. Initially, the fryer operator sets up each recipe. Once a recipe is performing satisfactorily, the setting can be entered into the computer memory and recalled by touching the proper key on the touch screen.
