Capable of producing 500 finished lb./hr. of batch fried potato chips of almost any style, the Heat and Control MasterTherm kettle fryer provides cooking oil that is heated uniformly throughout the unit by a thermal fluid heat exchanger immersed in the oil. The electro-polished heating tubes expand independently to reduce damage caused by thermal stress. The fryer features a continuous fines removal system, oil mist eliminator and screw jack hoist system that raises the heat exchanger and full-length hood. Single and multiple fryers are available with potato unloading, storage, washing and peeling equipment; slice feeders; de-oiling centrifuges; seasoning applicators; and conveying, inspection and packaging systems.
