The Heat and Control 2-stage French fry fryer system includes a 2-stage French fry fryer, integrated batter application system, oil filtration management system, oil mist eliminators, a heat exchanger and complete access platforms. In stage 1 of the fryer, the oil velocity matches the speed of incoming product as it passes through in a single layer; an oil inlet maintains equal side-to-side oil flow and directs fines out of the fryer. In the stage 2, multiple zones of oil inlets and outlets maintain a consistent average cooking temperature, and fines are removed at each zone. The system processes batter-coated and standard French fry products by utilizing a rail mechanism that moves the batter coating system in and out of the line when required.
