Dixie Canning Co.'s instrument system is for automatic control of steam cook only or steam cook with pressure cool processes in Dixie retorts. The system does not require an operator to manipulate the steam, water or valves in order to control the process. With the Dixie Retort and Instruments Package #4 and its PLC-based control with touchscreen interface, the operator enters desired set-points for cooling pressure, time and temperature, and if pressure cool is required, set-points for cooling pressure and time. A push of the start button initiates the process. The retort automatically proceeds through all necessary cycles and alerts the operator when processing is complete.
