Ground meat system

Designed for high-speed operation of up to 128 1-lb. portions per minute, the Risco RS915 ground meat system includes the Risco RS71 in-line grinder, the RS503 vacuum stuffer and the RS915 portioner. The system can be adjusted for accurate portion control ranging from 0.2 oz. to 66 lbs. with a maximum filling capacity of 24,000 lbs. per hour. The company says gentle handling results in positive particle definition and helps eliminate smear. Several knife and plate combinations make it possible to obtain different types of ground meat products and a deboning system creates in-line elimination of cartilage and bone.
