Households Still at Risk

In-home food safety improved during the past two years although the vast majority of households are still at risk, according to a study by Audits International (Highland Park, IL). Cross contamination, handwashing neglect and improper cooling of leftovers were cited in 31, 29 and 29 percent of households, respectively. The survey indicates 69 percent of “knowledgeable consumers” had at least one circumstance during food preparation that could lead to foodborne illness or injury, compared to 96 percent in 1997.
