Capable of measuring and analyzing key properties of food products, the Thermo Scientific Σ scan in-line guided microwave spectrometer moves the analyzer into the production stream, providing real-time process information. It can measure bulk properties of process material down to a fraction of a percent, including moisture content, fat, protein, salt and other properties such as total solids, water activity and viscosity. The spectrometer is suitable for use in the meat, dough, dairy, confectionery, nut butters and emulsions industries.
