The RS191 vegetable casing system from Risco enables a range of sausage links to be automatically portioned, enrobed in a vegetable casing and placed in a tray for final packoff. The company says the casing creates a seamless and clip-free product with a minimum of handling. It dries to a clear, taste-free coating. A central microprocessor controls the continuous process, using a single stuffer and tray denester for economical production. The entire system can be managed by one operator, says the company.
