A new report from the Center for Science in the Public Interest (CSPI) says ground beef and chicken are the riskiest meats in terms of food safety. James H. Hodges, president of the American Meat Institute, urged caution in interpreting the report's results, saying, “broader examination of the total food supply could have delivered a more meaningful examination of food safety risk from our normal diets, and would have shown that we have a meat and poultry supply that delivers consistently safe eating experiences.” CSPI categorized other beef, steak and turkey as high risk. Barbeque, deli meat, pork and roast beef are rated as medium risk, while chicken nuggets, ham and sausage were rated least risky.
