The Polar Pump receives cold butter blocks and pumps them through a jacketed line and out through a "shower head" for fast, complete and effective mixing, says Polar Process, the manufacturer. Mozzarella and other cheeses can be processed through the die on a Polar Extruder and the Polar Ultrashear can cut the product into smaller pieces for depositing or packaging.
