Using an external heat exchanger, the Heat and Control BPF breaded product fryer heats oil that is continuously circulated through the fryer and filter; on average, the oil volume is filtered every minute. With multiple oil inlets and outlets offering multi-zone temperature control along the full length of the pan, the frying temperature remains within 2°F of the set point for most applications. The fryer can be designed for a specific temperature change (Delta T) between the inlet and outlet.
