Available with product conveyors up to 80-in. wide, Heat and Control’s MPO-D2 convection oven features a controlled moisture process that cooks rapidly while sealing in natural moisture and flavor. Available with direct and indirect gas fires, electric or thermal fluid heating, the MPO operates with variable cooking time, temperatures up to 550˚F and moisture-by-volume levels up to 90%. The internally water-cooled pan, combined with automatic clean-in-place and belt-washing systems, minimizes burn-on of drippings and dramatically reduces cleaning times.
