The Florigo 25 t/h French fryer incorporates 6 zones equally divided over the length of the fryer; each zone has a controlled oil inlet and outlet for oil flow throughout the fryer kettle. Oil is continuously drained from the system, removing fines and particulates, while freshly filtered oil is injected to maintain oil temperature. Constructed of food-grade stainless steel, the fryer has a lost-motion lifting hood for access to every part of the system.
