The Heat and Control SO twin spiral oven provides 2-zone cooking control; steam only, dry heat or any combination can be controlled independently in each zone. Venting exhaust through a central stack prevents the cooking atmosphere from migrating between the two zones. Centered inside the top of the cylindrical enclosure, a fan circulates air in a 360° pattern across the full width of each conveyor tier and from the top to the bottom of the drum. The oven also includes a fully automated CIP system.
